How Coppini oil is made
The subsequent processes are:
- filtration > removes impurities and deposits from the oil
- polishing > makes the crude oil clear
- mixing it is the skilled art of the Coppini house that allows for the creation of perfect finished products in many flavours.
Â
By tasting, blending and tasting again, the Coppini family creates extra virgin olive oils in an endless variety of styles: very fruity (such as Mastro Angelo), or perfectly balanced (such as Coppini 100% Italiano or Classico), or delicate and not too peppery (such as the Pedimonte or Coppini EVO). The Coppini family’s ‘blendmasters’ – starting with Angelo and Andrea Coppini – have passed down their talent for tasting and exceptional technical expertise from generation to generation, creating unique extra virgin olive oils whilst constantly experimenting with new recipes and flavours to surprise consumers with new taste experiences.
Cold extraction
All Coppini extra virgin olive oils meet stringent quality prerequisites: they all derive from top-quality raw materials, obtained using modern, hygienic, and cold-extraction technologies, meaning at controlled temperatures below 27°C, which ensures better preservation of the oil's heat-sensitive components, such as polyphenols, vitamin E, and volatile compounds that generate positive aromas and flavours.
Raw materials are strictly analysed by the internal laboratory, both from a chemical-physical point of view (through analyses upon receipt) and an organoleptic one (tasting).
If they are perfectly compliant, they are then stored away from light and heat in large silos within the company's vast and extremely modern storage area.
